The new bakery in town is a bundtle of joy

Walking into Nothing Bundt Cakes on a Saturday afternoon I am immediately greeted by a warm smile from a cheery employee who directs me to the plate of free samples that sits to my right. This recent addition to the Mac-Groveland area made me feel right at home, the small storefront, decorated with pastels and flowers, made me feel as though I was in a cozy kitchen.

The manager, Wendy, was thrilled to talk about the history behind Nothing Bundt Cakes when I spoke to her. The chain was started in 1997 in Las Vegas by two women that loved to bake. Wendy excitedly told me, “When they opened their first bakery it got so busy they had to close it down because they couldn’t keep up.”

They have premade bundt cakes you can purchase on the spot, or you can order one ahead of time for a special occasion. There are several sizes you can choose from- eight inch for $19.50 ($30.50 if decorated), 10 inch for 29.50 (40.50 if decorated), and tiered for $67. For multiple people,  you can buy a miniature cake called a “bundtlet” for $4.25, or you can get some “bundtinis,” which are very small cakes that you can only purchase by the dozen, for $18.00. When you preorder a cake they have a ton of themes to choose from, they come with flowers, a sign, and cute little decorations like hats and pompoms.

At the moment there are 11 flavors of cake, Red Velvet, Chocolate Chocolate Chip, Lemon, White Chocolate Raspberry, Marble, Carrot, Classic Vanilla, Cinnamon Swirl, Pecan Praline, and Gluten Free Chocolate Chip are the permanent flavors. Fair Warning, although they take some precautions there is no guarantee that the gluten free cake is not cross-contaminated. They also currently have a Pumpkin Spice Flavor for the fall. Each cake comes topped with their signature cream cheese frosting.

Talking about the flavors they offer doesn’t do much if you don’t know how good they are. On my visit I purchased a Red Velvet Bundtlet and a Pumpkin Spice one, and brought them back home to eat. I won’t lie, I wasn’t in love with the Red Velvet cake. It wasn’t terrible, but I felt like there wasn’t enough flavor in the cake and the cream cheese frosting overwhelmed it. The good news is that the frosting is fantastic, but if I wanted to eat just frosting I would buy a tug of it at Target. Where the Red Velvet Cake was lacking, the Pumpkin Spice was fantastic. It was thick and moist, and the cake perfectly complimented the frosting. The best thing I tried that day was a sample of the Chocolate Chocolate Chip Cake, it was super chocolatey and rich. Though when it comes to that cake I would rather eat it without the frosting.

Nothing Bundt Cake is a really fun, delicious place to get something sweet. It’s right on Snelling by Macalaster so getting there couldn’t be easier, and even if it wasn’t easy it would be worth it.
